Vegan Ice Cream Bars

Vegan Ice Cream Bars. We partnered with our friends at Love + Chew to create these delicious dairy-free ice cream bars. Made with your favorite frozen dessert, a cookie crust, and topped with your favorite fruit. These bars are extra special because they are also all plant-based, high in protein and fiber. If you love cookies and ice cream equally, then this dessert is for you! This recipe makes enough to share with your family and friends. Or, you can whip them up just for yourself!

Vegan Ice Cream Bars

Ingredients

  • 2 pints ARCTIC ZERO Classic Vanilla
  • 5- 2oz Love + Chew Cookies (Mocha Chip used in this recipe)
  • 3 tablespoons nut butter of your choice (peanut butter used in this recipe)
  • 2 tablespoons vegan hazelnut spread

Directions

  1. Let Classic Vanilla pints soften for 15 minutes.

  2. Prepare the crust. Combine 5 Mocha Chip cookies and nut butter in a food processor or blender and blend until crumbly. Then press the mixture into the bottom of a 8×4 inch pan lined with parchment.

  3. Top with 1 1/3 pints of softened Classic Vanilla and spread equally.

  4. Combine the rest of the Classic Vanilla with the hazelnut spread and blend. Then pour over top the Classic Vanilla layer.

  5. Top with your favorite fruit.

  6. Freeze for at least 3 hours.

  7. Cut into squares. Enjoy!
